Thanksgiving plans

We’ve been invited to hubby’s boss’s house for Thanksgiving dinner this year, and my hubby accepted the invitation.  It will be nice to go and not have to worry about making such a big meal for the holiday.  I seem to have my hands full with the baby and it is hard to get a whole lot done, now that he’s crawling around and getting into everything!   I hope they let us bring leftovers home – if not I’m going to have to get a turkey breast and cook that myself so we can have some turkey here at home for sandwiches.  As far as I’m concerned the leftovers are just as great as the original meal!

Yummy cake!

At the grocery store I was going down the cake and baking products aisle and I noticed a box mix for carrot cake by Duncan Hines. The photo on the front of the box looked extremely appealing, so on impulse I decided to buy a box and give it a try. I bought the mix last week but have not been in the mood for baking until today. So while the baby was napping this afternoon I decided to make up the carrot cake mix. It was supposed to be the complete mix – just add water, eggs and oil like all the other cake mixes. But I went ahead and added a quarter cup of chopped nuts and a cup of crushed pineapple to the batter, plus a little box of golden raisins that I had on hand.

Well, the cake is spectacular. Hubby loved it, and so do I.  I’ll be buying another box of that cake mix the next time I go shopping again!

Tony Roma ribs

I was delighted when I went grocery shopping yesterday to find a package of Tony Roma brand barbecued short ribs in the refrigerator section of the grocery store!  I can remember a few years ago my hubby and I went on a vacation to DisneyWorld and we rented a condo near the resort.  Two nights we went to eat dinner at a nearby Tony Roma restaurant.  We had never eaten at a Tony Roma restaurant before, but we had heard that they had the best ribs in the world, so we decided to go try them out for ourselves.  Well, we liked them so much we returned for a second time a couple of days later.  So I was thrilled to find their ribs in the grocery store and I picked up a package.  I hope to serve them for dinner this weekend!  I’ll let you know how I like them!

Bats in your coffee!

I was reading an article on the Yahoo Odd News to see what kind of interesting stories they might have on there. I enjoy reading stories about unusual things that you don’t usually read in mainstream papers (although I do NOT read tabloids!)

I was surprised to read about a woman who found a dead bat in her coffee filter after she had drank her coffee! She is undergoing rabies treatments because the labs said that they could not test the bat for rabies.

I guess I’ll be checking the coffee filter every morning before we turn on the coffee pot!

Crackers

I’ve been trying to eat less potato chips and more crackers as a snack food.  I don’t know for sure if they are more healthy or not, but I think they are.  They certainly are less greasy!  I have to say, though, that the crackers that are touted as being good for you, such as Wheat Thins and Triscuits taste awful!  I’ve been eating the Wheatables crackers instead, they have better flavor.  I’m sure that they are not as healthy as the Wheat Thins and Trisciuts, but they are healthier than potato chips!  So there is a little bit of a trade off there.  They have a Toasted Honey Wheat flavor that I like quite well.  Just the right amount of sweetness to them.
